Bake and Make Up: Newfoundland Snowballs

We’re serving up a fresh batch of second chances with Season 2 of the heartfelt series Bake and Make Up! Each episode of the sweet series reunites a once inseperable twosome, from friends and lovers to siblings and coworkers, who have either lost touch or parted ways and sees them mend their relationship while working together on a recipe meaningful to their shared past. In Episode 2, we meet Newfoundlanders Clint & Jenn who became fast friends on the first day of grade 1 and remained inseparable until they left for different universities. Bold and blunt, Jenn found adventures to push careful Clint out of his comfort zone. In return, Clint trusted Jenn with his deepest secrets and she proved to be his best ally. But after graduation, when Jenn needed her best friend to hear her fears about becoming a mother, something went awry. Now, Jenn’s daughter is preparing for university and Jenn, feeling nostalgic, still doesn’t know the reason why they lost touch.

With more than twenty years since their last catch-up, Clint and Jenn try to recapture their friendship while preparing a treat from their shared childhood, Newfoundland Snowballs. See the delicious recipe below!

NEWFOUNDLAND SNOWBALLS
3 cups sugar
3/4 cup butter
1 1/4 cup milk
3 cups large rolled oats
1 cup unsweetened fine coconut
3/4 cup cocoa
1/2 teaspoon salt
1 tablespoon vanilla
1 1/2 cups additional coconut, for rolling
Instructions
1. In a very large saucepan, combine sugar, butter, and milk over medium heat and
bring to a boil. (The mixture will foam up while boiling so keep a close eye on it.)
2. While the sugar mixture comes to a boil, mix together dry ingredients. In a large bowl,
combine oats, 1 cup of the coconut, all of the cocoa, and salt. Set aside.
3. Boil sugar mixture for approximately 7 to 8 minutes, stirring occasionally, until mixture
reaches a temperature of 235 to 239 degrees Fahrenheit on a candy thermometer.
4. Carefully stir boiled mixture into the dry ingredients and mix well.
5. Add the vanilla and stir until fully combined. Refrigerate until fully chilled.
6. Once fully chilled, scoop rounded tablespoons of the mixture and shape into 1 1/2-
inch balls. Roll the balls in remaining coconut.
7. Arrange snowballs on a serving platter and get ready to eat!
